Fat = Oil. An oil is a liquid fat.
They are all 100% fats apart from a tiny amount of other stuff like water, sugars, proteins, minerals.
They have different compositions but tend to be just different proportions of the same ten different fats.
Opinion now is that mono-unsaturated fats are the best. The most readily available is olive oil. Next best is possibly canola which has a high proportion of poly-unsaturated fats.
There is no fixed composition for any of them, the exact make-up varies with the exact variety of plant and the growing season.
Vegetable oil is just a mixture of whatever happens to be cheapest on the market at any time - it might be a mixture of sunflower, safflower, peanut and canola one week and if canola gets expensive the makers will leave it out of the next batch.What oil has the leasts amount of fats in it? sunflower oil,vegetables oil,other etc oils.?
